Whenever this time of year comes around, I greedily snatch up as many boxes of cookies as I can knowing that it will be another year before I get anymore. Occasionally, I end up short-changing myself on a certain variety and find myself longing for that particular box come September. You may also just have forgotten to order one of your 'favorites' and in that case - I'm here to help!
Pinterest is the perfect way to snag recipes that are "copycats" of the originals. My all-time favorite and one of the most popular, Thin Mints, are simple to make and taste delicious. I happened to make these for a Christmas Cookie Exchange and found their texture and taste were spot-on.
When you first search, you'll come across this pin in which your cookie comes out looking identical, but you end up adding a few ingredients, some more steps and frankly, the simpler the better.
Instead, I opted to take this copycat pin using Ritz crackers (WHAT?!) and this four-ingredient copycat is a GO! Using Ritz crackers, semi-sweet chocolate chips (I used dark chocolate to mix it up), vegetable shortening (I used butter), and peppermint extract (plain mint extract is also fine), you can create your very own Thin Mints at home. The insides may not look the same, but they taste just as delicious.
Did I also mention that you can mix-up boatloads if you need a quick treat for a family party or gathering? When you make your grocery run this week, stop and get the ingredients to make these. I dare you.
